The Dish:
I made this cocktail for a St. Patrick's Day parade and it was a crowd pleaser. By making a mint-infused simple syrup, you can cut back on the amount of syrup used and cut out a few calories.
Serving Size: 1 cocktail
INGREDIENTS
2 ounces bourbon
1/4 ounce mint-infused simple syrup (below)
1/2 lemon (cut in half)
6 mint leaves (4 for simple syrup, 2 for drink)
Extra mint leaves or lemon wedge for garnish
Mint-Infused Simple Syrup:
Combine equal part water and sugar in a saucepan and heat and stir until the sugar dissolves. Doing 1/4 cup water with 1/4 cup sugar will give plenty for this recipe. Pour into a measuring cup with 4 mint leaves and let sit. I did this the night before making the drink and it was perfect!
DIRECTIONS
Place lemon, 2 mint leaves, and 1/4 ounce mint-infused simple syrup in a shaker. Muddle together. Add 2 ounces bourbon and shake vigorously for about 20 seconds.
Pour into an ice-filled rocks glass and enjoy. Cheers!
