Frothy French Martini

Updated: Apr 1, 2020

The Dish:

You may be seeing egg whites added to cocktails to give it a frothy consistency, however the idea of drinking an egg white is not something that appeals to me. Aquafaba, or the liquid in canned chickpeas, is a vegan way to make a cocktail frothy!

When treating myself to a cocktail, I like to keep it around 150 calories or less, but I do think this one is worth the small splurge.

Serving Size: 1 cocktail

INGREDIENTS

  • 2 ounces vodka

  • 1/2 ounce chambord

  • 2 1/2 ounces pineapple juice

  • 2 tablespoons aquafaba (liquid from a chickpea can)

DIRECTIONS

Place your martini glass in the freezer so it is chilled.

Drain the liquid from a can of chickpeas to get the aquafaba.

Pour the vodka, chambord, pineapple juice, and aquafaba into a cocktail shaker and do a dry shake (no ice) for 15 seconds. Because there is no ice, the shaker may not be totally snug, so do this over a sink and with a towel over the shaker.

Add ice and shake vigorously for another 15 seconds until the cocktail looks foamy.

Pour into the chilled martini glass and enjoy. Cheers!
